Verde is collaborating with local Gastroenterologist and, now, author, Dr. Will Bulsiewicz (aka Dr. B or @theguthealthmd) on a vegan “rainbowl” packed with gut healthy nutrients.
“Somewhere Over the Rainbowl” (right) features a base of Kale and Spinach topped with Quinoa Tabbouli and Chickpeas. In classic rainbow fashion, the bowl is beautifully topped with Heirloom Tomatoes, Red Peppers, Carrots, Raw Corn, Cucumbers, Purple Cabbage, and Pickled Onions. To top it all off, the dressing is an oil-free Avocado Basil Dressing.
