Braised & Glazed, Charleston’s Newest Culinary Pop-up, Can Now Be Found Around Town

A local couple recently launched Braised & Glazed, a new culinary pop-up that is now appearing at several Charleston area breweries and events. The concept was created by Chicago natives, formerly of Urban Counter, Chef Adrian Ion, owner and head chef, and his wife, Taylor Ion, marketing and events, and features a variety of affordable hand-held eats.

“We’re bringing some of our favorite bites from all over the world to Charleston,” Adrian said. “From Chicago, to Romania, you can expect new flavors and dishes at every pop-up along with recurring staples, like the Tavern Burger.”

Braised & Glazed features seasonal rotating menu options of different cuisines which have included chicken shawarma, beer braised bratwurst, braised beef tacos, southwest stew, braised pork belly BLT, white bean hummus with warm pita, chicken Tinga tostada, and a double patty smash burger with a pretzel bun called the Tavern Burger.

“Pop-ups and food truck menus don’t have to be expensive to be delicious,” Taylor said. “We’re focusing on simple, seasonal, local ingredients that make up affordable options great for pairing with a beer or cocktail.”

The pop-up is rotating around local breweries like House of Brews West Ashley, Two Blokes Brewing, and Snafu Brewing Company and selling menu items at bars like Dalila’s on Spring Street.

“We do this because we love sharing great food with people,” Adrian said. “We hope to expand to a brick and mortar one day, but a food trailer is next on the list for us so we can expand the menu, travel to more locations and do more catered events.”

- Saturday, February 12th at House of Brews from 4 pm to 8 pm
- Friday, February 18th at a Charleston Battery preseason game
  - Kick-off at 8 pm
- Saturday, February 19th at House of Brews from 4 pm to 8 pm
- Saturday, February 26th at Two Blokes Brewing from 12 pm to 4 pm
